BEETIE DEVILED EGGS

How can you brighten up a deviled egg?? Add yummy beets to the mix.

Time: 3 – 3.5 hours; 30 min prep time

Yield: 24 pcs

Recipe:

12 eggs; hard boiled and peeled

3 cups water

1 cup white vinegar

1 beet, peeled and quartered

1 small shallot

1 tbsp basil leaves

1 tsp coconut sugar

1/3 cup mayonnaise

1 tbsp grainy Dijon mustard

1 tsp celery seed

1 tbsp raw parsley leaves, finely chopped

2 green onions

Paprika, to taste

 

Methods:

1.       Bring the water, vinegar, beet, shallot, sugar, and basil to a boil.

2.       Then simmer until the beet is tender. (Approx. 20 min)

3.       Cool the mixture and remove the beets, then put in a container that you will next marinate the hard-boiled eggs in (I used a large wide mouth mason jar)

4.       Add the hard-boiled eggs to the beet mixture and leave in the fridge to marinate for about 2 hours. Gently stir or rotate the eggs and mixture around every 30 minutes

5.       Remove the eggs from the beet mixture.

6.       Cut the eggs in half lengthwise removing the yolks

7.       Mash the yolks with a fork and add mayonnaise, mustard, celery seeds, half the parsley, and finely shred the beet (with a fine cheese grater) into this mixture.

8.       Add this mixture to a Ziploc bag, cut a small hole in the corner so you can pipe the mixture into the egg halves.

9.       Add a little green onion to the top and sprinkle with the remaining parsley and paprika
