Cinnamon Flaxseed Bread Recipe
When it comes to eating bread and nourishing our bodies. Flax bread is a WIN WIN.
This recipe is a flour free, low carb bread that is diabetic friendly. Which means it does not spike those blood sugar levels. Those that know me, know I have a type 1 diabetic child so when I find something that works then it feels like a BIG WIN! This recipe tastes good and won’t send his blood sugars on a crazy rollercoaster ride.
Another huge bonus to this bread is that it has a good dose of your daily fibre!

Recipe:
Prep Time: 15 min; Cook Time: 1 hr; 12 Servings
Ingredients:
2 cups Ground flax seed
1 tbsp Baking Powder
3/4 tsp Sea Salt
1 1/2 tsp cinnamon
5 Eggs
1/2 cup water
1/2 cup Coconut oil
1 tbsp black sesame seeds
1 tbsp white sesame seeds
Method:
Preheat oven to 350 degrees. Place parchment paper on the inside of a loaf pan.
In a mid sized bowl, mix together the ground flaxseed, baking powder, salt, cinnamon, and sesame seeds.
In another bowl, whisk the eggs for about 45 seconds , then add the water and coconut oil. (I used the Brain Octane oil from Bulletproof)
Add the wet ingredients to the dry and stir until combined.
Let the batter sit for 1 to 21 minutes to slightly thicken.
Pour the batter into the lined loaf pan and smooth out the top. Sprinkle the top with more cinnamon.
Bake for about 50 minutes or until the top feels set and the loaf is browned.
Once cooled, slice and store in the fridge or freezer.
